Kulche Chole (also known as Chole Kulcha) is a legendary dish that has fed countless
people across North India for generations. The dish traces its roots to Amritsar,
Punjab, where it's traditionally served as a hearty breakfast from roadside dhabas
and dedicated kulcha shops. At RAS Indian Mart & Eatery, we bring this authentic
experience to Edmonton, preparing both components with traditional techniques and
quality ingredients.
Our kulcha is made from refined flour dough that's leavened with yogurt and baking
soda, then rested to develop its characteristic soft, pillowy texture. Each kulcha
is rolled by hand and cooked on a hot tawa until it puffs up and develops beautiful
golden-brown spots. The result is a bread that's crispy on the outside, soft and
chewy on the inside, and perfect for scooping up every last drop of chole.
The star of the dish is our chole—chickpeas slow-cooked in a deeply flavourful
gravy. We use a traditional tempering of cumin, bay leaves, and dried red chillies,
then build layers of flavour with onions, tomatoes, ginger, and garlic. Our
house-made chole masala blend includes black cardamom, cinnamon, cloves, coriander,
and the essential amchur (dried mango powder) that gives Amritsari chole its
signature tangy punch. The curry is thick, rich, and packed with the complex
spice notes that define authentic Punjabi cooking.
